みそ汁の味が家ごとに違う様に、同じ様な料理でもチョットした地域の違いで随分と違うものだ。
中央以北のインドではマサラドーサと言うとベジタリアンカレーに巨大だがとても薄く焼いたドーサが三角に折られて出てくる。
ある南部の町でマサラドーサと注文すると卵の入ったチキンカレーがドーサとイドリーの中間の様な物と一緒に出された。これは久々に食する肉の味で素朴ながらとても美味しかった。
ご存知の様にカースト上位の人は肉を口にしない、この事から判る事だがインド南部の複雑な事情が結果この美味しいチキンカレーを産み出している事はとても皮肉だ。
In Italy, the taste of momma should be her pasta. In India, the taste of momma is definitely her curry. They are just like miso soup in Japan that each family has special taste of its own which is originated in its local food culture. My favorite was the Southern Indian Curry. They are full of vegetables with tasty chicken in light soup. Yummy…Momma!
